Stack of Pumpkin Pancakes

I saw this recipe on Kristen's Whatcha Eatin' and I knew that I had to have them now! It was rainy and damp here again this morning, and the warm, autumnal spices seemed so right.

I read all the ingredients, had everything on hand. I was a little nervous about the whole wheat as it's not one of my favorite flavors, but considering how much white flour gets consumed in this house, I decided it's about time to make some small, healthier choices. I also liked the idea that the recipe called for applesauce, which means less oil. (Change is easier when done in small increments, don't you think?)

I tasted the batter, decided that it wasn't spicy enough, and increased the spices to 1 1/2 teaspoons cinnamon and 1 teaspoon nutmeg. I didn't increase the clove as sometimes clove can be overpowering. The balance worked perfectly for us.

And you can see the result. Golden orange pancakes of pure delight. The wheat flavor was an under note, with the pumpkin and spices taking center stage. Ole Sweetie-Pi just loved these, and I have to agree.

A delicious, healthier choice pancake recipe and one we shall certainly enjoy again and again. Picture shows a stack of six for the purposes of this photograph, which was later divided between the two of us, with melted butter and syrup. (Served with a side of bacon, not shown.) LOL!!

  9. My goodness...these looks so good! Incredible! Never used pumpkin this way before but this looks like a super good idea! I love that plate too....it is so pretty and a great backdrop for your recipe. I thank you for your wonderful words on my post today. I am too emotional this first mother's day without her to do much...the boys tactfully celebrated with me yesterday and reserved this day for me to putz about the way I wanted to ... I need to be alone with my emotions. So...I am mending the fence, planting some rescued plants from the garbage of an expensive plant store and re caulking windows and electrical panels as the weather is WARM WARM WARM! Yee Haw. Yep...I'm the handywoman in the home....I live with computer geeks!

  13. Katy those look just great. I've had pumpkin pancakes before and just love them. I should also try whole wheat next time also. Would you believe it's raining here again...enough is enough already!!!

  20. Katy, for the life of me I can't understand why so many people relegate pumpkin to T'giving and Christmas. Maybe it makes us appreciate it more when we eat it only then??? In any event, these sound wonderful. My husband is the official Saturday morning pancake man- or Sunday after church. I'll have to give him a copy of this recipe!

  21. Tammy, I suppose it's because pumpkins come into harvest in late summer and fall and because of the warm spices that are typically used. I say, let's change that perception!

  22. I keep looking for different ways to make pumpkin recipes and when I saw you had one, I had to peek. I had not thought of pumpkin pancakes. That is a great idea with great flavor.

    I am planning, at this moment, to bake pumpkin muffins, pumpkin brownies and pumpkin bread with cream cheese filling. Do I dare add pancakes? I also am creating a pumpkin mousse kind of a concoction. Working on the details.

    I was offline for two days and trying to catch up what I had planned, is overwhelming. I am off from work, this week and intend to bake, cook and blog for two days of it, if not more. We are having loads of company again and I have my "orders."

    Thanks for always having a recipe I can use. Still dreaming of the cornbread covered casserole. Add some beans to it and you have a real chili on the bottom.
