I visit all of your wonderful blogs and see so much delicious food that my must-make recipe folders are literally bulging and bursting. There are recipes that don't make it to my folders, however, and those are the ones that look especially delicious, easy and quick, perfect for those nights when I don't have the time or inclination to spend a lot of time in the kitchen but still want to prepare something nice.
Here's a three ingredient recipe that I think that at first blush many would pass by. However, don't let its simplicity deceive you; it's so simple and so delicious that the recipe has earned its name. I discovered this keeper recipe on Bunny's Warm Oven. Carol, who's an absolute doll and one of three fabulous cooks, posted this on Bunny's Warm Oven. If you haven't visited with them before, I hope you do because, as I mentioned, there are three fabulous cooks, each preparing a recipe for a portion of a meal so that we have the benefit of seeing a whole meal. A trio of delicious recipes in every post!
Simply Great Chicken
About 3 1/2 pounds boneless, skinless chicken (I've used both thighs and breasts)
1 ( .7 ounce) packet of dried Italian dressing mix (such as Good Seasonings)
1/2 cup brown sugar, packed
Preheat your oven to 350 degrees Fahrenheit. Grease a 12 inch x 9 inch pan and set aside, and/or it may be preferable to line your dish with aluminum foil as the sugar tends to caramelize while baking.
Rinse chicken, pat dry with paper towels.
Combine and the dried Italian seasoning mix and the brown sugar, mixing together well.
Dip and press the chicken pieces into the mixture, coating front and back and place into your prepared pan, topside of the chicken facing up. Any extra coating that remains can just be sprinkled over the chicken.
Carol says to cook for 50-60 minutes or until chicken is done. I do that as well, but during the interim, I turn the chicken over a couple of times and spoon the resultant saucy melted brown sugar mix over the baking chicken allowing, with the final turn leaving the topside facing up for the last bit of baking. I want to get as much of that flavorful coating as I can.

ReplyDeleteThe Italian seasoning is used dry; do not prepare it as as a salad dressng. The packet is mixed with the brown sugar and then the chicken is sprinkled with/dredged with the mixture. Hope this helps.

ReplyDeleteTo Anonymous September 7,use dry the Italian package seasoning without making it into a dressing. You are combining it dry with the brown sugar and sprnkling/dredging the chicken in it. There should be enough fat even on the boneless, skinless chicken to give it some moisture, and the brown sugar will melt down.
Help! I don't have any brown sugar! I have regular sugar and caro syrup. Is there a good substitution or do you suggest I just wait to get to the store?
ReplyDeleteHmmm...brown sugar is just a mixture of molasses and white sugar, and in a pinch I've substituted it to make cinnamon rolls. Personally, I'd wait to buy brown sugar, but that's me. I used a ratio the two ingredients that I found on line by googling but to my taste it was far too molasses-y for me.

ReplyDeleteIt's personal preference, but probably the light brown. The darker brown has more molasses in it, and if you are not a fan of a bigger molasses favor, I'd forgo it. I use the dark molasses to make gingersnap cookies, caramel, and the like.
DeleteRaw chicken should never be rinsed - it only spreads bacteria and possibly salmonella, E.coli, and other pathogens. Handle as little as possible.

DeleteCooked this tonight for the family. They loved it! I used chicken legs (what I had in freezer)instead and it was excellent. Followed the exact direction for mixing and turned/drizzeled halfway through cooking. "It's a keeper" said my 7yr old.

ReplyDeleteSamantha,nowadays I use four to six chicken thighs, as there's only the two of us. I use the whole recipe for the coating. It makes more than I probably need but I like the coating, smiles. For a difference of half a pound of chicken, I wouldn't give it a second thought.

Alas, I'm one of those scaredy-cat cooks in the kitchen who don't deviate too much from a recipe, and I seem to lack the fearlessness of some cooks, like my mother, who create something fabulous out of nothing. I would be hesitant to try it, but I know oftentimes pork is swapped out for chicken, and vice versa, in recipes. I'm thinking of my Chinese chow mein recipe where I've done that, and I should've stayed with the original recipe :)

I will say that I wrapped a piece of bacon around the pork chops first and instead of "coating" the chops I placed them in the bottom of the baking dish and sprinkled the brown sugar/dressing mixture on top and then baked it. when it came out of the oven I used a spoon and drizzled the syrup over the chops before serving.

There are recipes out there for just marinating the chicken in bottled Italian dressing and then baking. My boyfriend makes it all the time; it's one of his favorites but I don't care for it particularly.

ReplyDeleteHeather, sorry to be so late in getting back to everyone. I haven't used the bottled Italian dressing and would be reluctant to try it. A couple of other ladies have raised the same question, and I personally would just wait until I had the dried seasoning packet. If all you have is the bottled dressing, I would be inclined to just marinate the chicken in the dressing and then bake/grill it. It's an old-timey recipe that I've seen kicking around on the web. When my sweetie was single, that was something he would make for himself. I personally don't care for it, but if you google chicken, Italian dressing I'm sure you'll find many variations of it. Good luck!

DeleteFor all of you that don't have bottled dressing, it is really easy to mimic the dry seasoning packets. Its just spices after all :) Just google "dry italian dressing recipe" or "good seasons dry recipe" and you should be able to come pretty close!

DeleteHello, I'm a broke, single girl and want to say that this has become my go-to recipe. I mix up the seasoning, then take out what I need to make one or two pieces of chicken at a time (I've been using thighs and they work great). It's about 40 seconds of prep! For sides I use frozen vegetables and rice or potatoes, then I make a gravy mixed with the juices from the chicken. It's a delicious meal I can give to my friends without worrying about my budget! Well worth a try!

Hi, I'm looking to make this for a party. How many servings is this recipe for? Also, I assume I can make in advance?
ReplyDeleteI would say probably six, but it depends on if, when going by weight, you are using bone-in, skin on chicken, compared to boneless skinless chicken and what else you are serving to "fluff" out the meal. We are older and our appetites seem to have gotten smaller so for us one boneless, skin(less) chicken thigh seems to be enough, though for heartier appetites you may want to consider one and a half or two.

I don't cover the chicken, but it's because I turn the chicken a couple of times while baking and I don't want to mess with the tin foil/cover. If you cover, reduce the cooking time, and I'd try to leave off the cover towards the end to slightly crispen the chicken.
DeleteI made this today with thighs. It was good, but when it came out of the oven I thought it needed something else. I brushed on some Trader Joe's Soyaki while it was cooling and that made it "wow".

ReplyDeleteDebra, since I saw your note, I thought "brilliant!" I am not familiar with using Splenda at all, but I have seen their brown sugar in the grocers. If it's true, that their product is like using regular sugar, then I say, go for it. I'd love to know how it turns out if you try it. I have some friends who could use/would love a sugar-free recipe, and this would be a great one.

ReplyDeleteIn this house, rice and broccoli, because I like the extra sauce on both, smiles, and because the sauce can be a little sweet because of the brown sugar. A commenter mentioned she made a side salad, and I'm thinking that would be super good as well; maybe something with lots of tomatoes. Someone else said they served corn. And the lady above made broccoli and roast potatoes. I think whatever you want would be good, just try to stay away from something sweet because of the sauce.
DeleteI am a mom of 4 kids ages 5-9. It is VERY hard to find something that all 6 of us like. I can think of 4 dishes off the top of my head and this is one of them. I was a little skeptical b/c I didn't think brown suger and italian seasoning went together, but I thought, what the heck and tried it anyway. It was SUPER easy, and one of the most flavorful chicken dishes I've evern tasted. EVERYONE in my house wanted seconds! Only too bad for me it only made just enough. I will have to probably double this recipe the next time I make it. We served it with rice and corn, and it absolutely hit the spot. This is definitely going into my recipe book.

DeleteIn the oven now. Making baby roasted baked potatoes and an asparagus and fennel salad with a lemon vinaigrette topped with toasted pumpkin seeds and shaved pecorino Romano cheese. So excited for dinner tonight!

DeleteI made this with a few tweaks. I used white sugar instead of brown because that is what I had. I cut the chicken into small pieces to make "nuggets". The family loves it!
ReplyDeleteGood idea with the white sugar--I might've added a tiny bit of molasses to the sugar to make brown sugar, but I think you have a terrific idea. The recipe is a nice combo of sweet and herbs.
DeleteCan I just say that based on all the fabulous comments for this recipe, I thought it was going to be a delicious dish. Well, I just finished eating it and my husband and I found it to be just average. It certainly needed something so I added a couple dashes of soy sauce, still not great, but helped it a bit. Sorry :(

DeleteMy 9 year old is the world's pickiest eater ever (plus he is literally not interested in food - totally crazy!), and he calls this dish his favorite chicken. He LOVES it! I've been making it for about a year now on a regular basis, sometimes with boneless breasts (his favorite) and sometimes with boneless breasts and thighs (my favorite). It's pretty good and VERY easy. I found it on Pinterest. I love that I can always have the ingredients on hand for it. It may not be the fanciest dish out there, but if my son will eat it and other people like it too, I'm always happy to make it!

DeleteI, too, have a picky eater. I've been very frustrated with him lately because he hates so many things that the rest of the family love. Usually getting him to eat a few bites of meat is a big chore. I had 2 lbs of chickenn that were cut into 10 roughly equal sizes. He ate THREE pieces! That is MORE than his fair share! LOL Was asking for his third as the rest of us were leaving the table. Shocking!

DeleteI made this for the first time, a couple nights ago. I had a large pack of bone in fresh chicken thighs. I did remove the skin. Double the ingredients (1 cup packed brown sugar and 2 packages of the Good Seasons Dry Italian dressing mix) because there were 10 large chicken thighs and we wanted plenty of sauce. I used dark brown sugar, because that's what I had open. Since it was bone in, I raised the temp to 375 and cooked for about an hour. Oh my, best chicken EVER. I ate two pieces, and normally I usually don't finish one. As for the hubby...he asked me last night if we could have the leftovers tonight. First time in almost 31 years he's ASKED for leftovers. Thank you so much for sharing this recipe. Mine looked like your picture, just a bit darker because I used dark brown sugar. This recipe is a real keeper!
