Wow, this was a surprise hit at my breakfast table recently. It is soooo bad for you but it tastes soooo good! This is called a pancake, but in texture, it's more like a cream puff with bacon. I served this with a generous amount of syrup and both Sweetie-Pi and I were well satisfied. This kind of breakfast reminds me of long wooden tables and benches filled with guests and family members who are filled with anticipatory delight. I can almost hear the echoes of their laughter and conversations...
Look how nicely the baked batter rises up the side of the baking dish, just cuddling up all that eggy goodness and wonderful bacon (and gulp! bacon FAT!) . I think it would take a month of oatmeal to clean your arteries of all the fat and cholesterol in just a single serving of this.
Nevertheless, we liked this so much I am going to make this again. However, I think I'm going to lightly cook the bacon beforehand to try and reduce the amount of fat. Also, the bacon did not cook as crisp as I would have liked, and I think a little precooking would help to solve that. Turkey bacon might be a good substitute here, but if I had it, I'd have to hide it so Ole Sweetie-Pi wouldn't know what I was up to. He thinks he does not like turkey bacon. While I definitely think the bacon fat really add to the flavor of this, I just don't believe we need all the fat from six slices of bacon in order for this to be delicious.
German Pancake
(Adapted from Marcia Adams' Heirloom Recipes)
4 large eggs, at room temperature
1 cup milk, at room temperature, divided
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon salt
6 strips of bacon or turkey bacon
Maple syrup or fruit topping of choice
Preheat your oven to 375F. Grease and set aside an 8-inch square baking dish.
In a large bowl, beat the eggs thoroughly, add 1/2 cup of the milk and the vanilla. Beat in the flour and salt and then, lastly, the remaining 1/2 cup of milk.
Pour the batter into the prepared baking dish and place the bacon on top of the batter.
Bake for 45 to 60 minutes or until the top is golden brown and puffy. Cut into serving pieces and serve immediately with your favorite syrup or fruit topping.

Dutch pancake...yes I have heard that as well, I think, now that you say that. We used to go to a restaurant that served Dutch apple pancakes that looked very similar to this, and indeed I make a such a pancake, but it is attributed to the Amish. Grins. Nothing brings the world together like sharing food, I think.

My mother was born in England and she made a lot of Yorkshire puddings, which is very similar to your recipe today (but savory instead of sweet). Beautiful!

The only reason they called it Dutch is because they messed up the word Deutsche wich sounds similar to dutch but means german..My husband who is dutch was always asked in the U.S. about certain foods that are german and not infact dutch at all..lol

It seems like my food is always done a little sooner so I try to go with visual signs and the shortest bake time given. How many would one of these serve? I have twin 13 yr olds, a 12 yr nephew, and my honey and myself to feed.

ReplyDeleteIngrid, I'm going to say that it has a eggy flavor (not like an omlet, but really more like a Yorkshire pudding that Chow and Chatter likened it to). The recipe says serves 8, but honestly I cut this into fourths, and found that a more than adequate serving for two adults. There is no "Poke" test to tell when it's done. I looked to see how brown the pancake was. The photograph is a pretty good representation of how brown I let it get, very brown without burning. I was more concerned about the bacon not being done as well as I would have liked and let it go for another three minutes or so even when I thought the pancake was done. If I were serving teens and two adults, I would probably be inclined to make two pans of this, but then I'm a nervous wreck when it comes to serving food and always have way too much. If you are fluffing out your breakfast with fruits and juices, or maybe some hash browns, then cutting this in half and then twice across to make six servings would be good. All you'll have are 2 1/2 x 4inch servings. Not a big serving. If your family are hearty eaters, I would consider doubling the recipe.

ReplyDeleteI made something like this once, it was called a Dutch Baby. The ingredients are similar but I didn't have the bacon! Yum-o!!
ReplyDeleteI came here to clarify the small doubt you left in my blog on Peanut powder......We generally mix that powder with cooked or steamed rice dear......When the rice is completely cooked then take out in a serving bowl and when you are ready to eat....them mix up the rice with a drop of ghee(clarified butter) and then mix up this powder and eat. Hope you got me.....We Indians prepare lot of spice powders to indulge with hot rice and breakfast items like Idli, Dosa and Vada....the recipes of which can be found in the recipe list....menu under the header in my blog.....hope u make this powder and indulge....
