Amish Macaroni Salad


Whenever I see the word Amish in a recipe title, I am pretty confident that I'm going to love it. This Amish macaroni salad is no exception. This is the only macaroni salad that I'll eat.

The first time I ate it, it was a huge surprise as I had never eaten a sweetened salad like this before. There was culture shock going on in my mouth. Around here, it's pretty standard fare to have just macaroni, mayo, maybe a boiled egg or two, and maybe tuna fish (which I positively loathe in pasta salad, by the way) and likely an onion or green pepper. Can you say flavorless? Colorless? I can go my whole life without it and never feel I'm missing a thing.

But what's a potluck or a barbeque without at least one pasta salad. Along comes Amish macaroni salad to fill the bill. So, I took a chance. It was almost love at first bite. Yellow from the mustard, smooth, creamy, sweet, tart. Flavorful. BUT, I felt the recipe was too sweet (can you believe that with my sweet tooth?) and have hence reduced the sugar in the dressing to 1/2 cup, and only use real mayonnaise, not Miracle Whip. Now' we're talking macaroni love.

  1. I lve anything that has Amish in the name of it too! As a matter of fact you can buy Amish potato and mac salad at our grocery store here it's that popular but I like it that I can make it at home with this recipe. I had never heard of putting tuna fish in Macaroni salad until my hubby's mother came to a picnic with it some yrs ago. Lets just say I don't care for the idea and leave it at that! Love this recipe!!!

  3. LOL, When I read what you were saying about tuna fish....well, I love it with tuna fish and peas! LMBO. In any case, I probably would like your version too. I love all kinds of macaroni salads....especially when someone else is making it!

  5. I meant Macaroni Salad. Mom's was like this and I grew up near the Indiana Amish. Wonder if she was influenced.

  8. recipes in old cookbook are very interesting .... I also collect old ones from around my area....church..and societies...garage sales are great places to find them...

  9. Hendria, thank you for your sweet compliment! The vintage recipes are so much fun to read. Plus I find it's a historical (sometimes hysterical!) comment on our times, e.g. "The Ten Cakes Husbands Like Best". Times do change.

  10. I love macaroni salad too, but the recipe I have doesn't have eggs and I LOVE eggs in salad! I am going to make this pasta salad pronto! Thanks for creating my menu for next week, you have too many good recipes to pass up!
